I LOVE natural healthy gf vegan brown rice macaroni and sheeze mixed with avocado and baby bella mushrooms. It’s yummy! I’m very grateful for this refreshing cool cloudy rainy day. I haven’t been able to cook in weeks because of the intense oppressive humid heat. I’ve been making healthy fast meals using the microwave and today, I’m very happy for the cool refreshing reprieve, thank goodness! This is my family’s favorite homemade dish and I’m very grateful to have all the healthy delicious ingredients to make it. Enjoy the easy recipe!
Mac ‘n’ sheeze with baby bella mushrooms and avocado
4 C natural gf brown rice macaroni
3-4 C baby bella mushrooms, rinsed, chopped
1 medium or large ripe avocado, chopped
4 heaping tbsps. Original Flavor Vegenaise
1 tbsp. nooch nutritional yeast
1 tsp. minced raw garlic
1 tbsp. Bragg Liquid Aminos
1 tsp. Bragg Liquid Coconut Aminos
2 heaping tbsps. Organic Earth Balance
1 pinch turmeric powder
Bring a medium size stainless pot of filtered water to a rapid boil. When the water boils, reduce the heat to medium and pour in the macaroni. Stir evenly often to prevent sticking. I add a dash of sea salt and 1 tsp. of extra virgin olive oil to prevent sticking and boiling over. It helps. Allow the macaroni to cook for 20 minutes or until soft enough to eat and when it’s finished cooking, turn off the burner. Thoroughly drain the water. It’s a good idea let the macaroni cool for 10 minutes before eating it, but it’s up to you. Add and mix in the seasonings. Serve and enjoy!
